Use the Platform Strategy to Make Money with Taproom Food
Jan 17, 2022Mark Meckler is a chef, professor, and VP of Curriculum for Crafting a Strategy. He says the way to make money on food in your taproom is simple: Use the Platform Strategy.
A Platform Strategy involves using a small number of ingredients to make a large number of menu items.
Think about your local Mexican food restaurant. There may be 30 or 40 offerings that are made up of a handful of menu ingredients.
This provides choice and variety for the consumer, while allowing the restaurant to limit their purchasing to a few core ingredients.
Mark says bartenders do this all the time with mixed drinks. Vodka, for example, can be used to make 15 different drink offerings.
Consider this in your taproom: How can you craft your menu offerings so that you offer a variety of food choices which only require a small number of ingredients.
The Platform Strategy allows you to contain costs and food inventory while still providing a wide selection of items for your guests.
Sometimes, the simplest strategies are the best. And the Platform Strategy might be just the thing to help you make money on food in your taproom business.
